A toast to the end of the year

December is approaching and with it come: parties, dinners, gatherings and everything else that involves these times. For some, they are seen as celebration and joy.

For others, it's like a period of gluttony. The end-of-year festivities basically last two days, or four at most (December 24, 25, 31 and January 1) and the year has 365 days. In other words, when the exception is not the rule, that's okay!

Enjoy, have fun with family and friends. Enjoy yourself. Reflect and move forward. I want to share some thoughts with you, whether it’s to think about your New Year’s Eve dinners or for any other moment in your life!

That vitamin “P”

I often talk about a certain “vitamin” that few people know about or know too much about nowadays: “vitamin P” – for Pleasure. I’m joking to tell you that it’s part of your body, but you have to know how to take it to bring joy and not guilt. There’s a time for everything.

Those who know me (and you who follow me here must have noticed) know that my way of seeing food, nutrition and everything that permeates this universe is: for whom, how much and when should anything be consumed. Nutrients, yes. But affection, memories and all the emotional baggage that the act of eating brings as well. My mission as a nutritionist is to be able to share with people that everything is possible, but not everything is good for us.

Stimulate reflection, shed light on consciousness so that the best choices can be made according to your goals, which can often be contradictory, but with a good pinch of self-awareness can be connected and more aligned. Understanding that in life, everything can be enjoyed in moderation and without extremes.

Another cycle ends, to make way for the new! How wonderful! I hope you blow away what no longer belongs to you. That you drink many sips of courage to make room for the NEW. That you plant green and fertile trees in your mind, like beautiful and tender broccoli!

And may you regain confidence in your body. My gratitude to you who follow me here. I leave you with a recipe that I love and that can help you out on those days of excess, in a healthier way. Until next year. Kisses nutritious .

French toast

end of year

Ingredients:

  • 4 slices of whole wheat stale bread (can be gluten free if you prefer)
  • ½ to 1 cup almond milk
  • 2 organic/free range eggs
    2 tablespoons coconut sugar
  • 1 dessert spoon of ground cinnamon
  • 1 pinch of sea salt
  • Extra virgin coconut oil

Optional:

  • ½ vanilla bean or 1 teaspoon of natural essence
  • 4 cloves
  • 1 star anise
  • ¼ teaspoon freshly grated nutmeg

Preparation method: Beat the eggs until you get a smooth cream, seasoning with salt. If you want, before using the almond milk, season it with optional spices and heat it on low heat for 10 to 15 minutes, without boiling. Let it cool and mix it with the eggs.

The amount of almond milk will depend on the type of bread and the thickness of the slices. In a deep frying pan, add coconut oil until it completely covers the bottom with a thin layer. Heat over medium heat. Meanwhile, dip each slice of bread in the liquid mixture on both sides and, when the oil is hot, fry them, turning them over until they are completely golden.

Place on paper towels to absorb excess oil. In a shallow dish, mix the sugar and cinnamon well and coat the fried bread slices on both sides. If stored in a closed container, they will stay good for up to two days.
